Savory Heavenly Ham and Cheese Appetizers

INGREDIENTS:
Crust:
1 cup grated Parmesan cheese
3 cups crushed saltine or soup crackers
1 stick butter, melted

Filling:
1-1/2 cups Heavenly Ham, cubed
2 – 8 ounce packages cream cheese, softened
1 cup sour cream
3 large eggs
1-1/2 cups shredded Swiss cheese
1/2 cup chopped green onions
1 clove garlic, pressed
1 teaspoon dried rosemary
1/2 teaspoon salt
3 tablespoons grated Parmesan cheese, as topping

INSTRUCTIONS:
Crust:
Preheat oven to 325°. Mix all ingredients together. Grease mini-muffin tin and press two tablespoons of crust mixture into each space. Bake for 10 minutes. Remove from oven and set aside while making filling.

Filling:
In large mixing bowl, slowly beat cream cheese and sour cream. Add eggs one at a time. Then add Swiss cheese, Heavenly Ham, onions, garlic, rosemary and salt. Mix well.
Fill each mini-muffin cup with one tablespoon of ham mixture. Top with a sprinkle of Parmesan cheese. Tap muffin pan on the counter before putting in the oven.
Bake for 15 minutes or until lightly browned on top and firm in the center. Remove from pan and serve warm or at room temperature.

Yields 48 individual appetizers
